Slow Cooker Butternut Squash Soup. A smooth slow-cooker butternut squash soup with apple, carrot, sage and vegetable broth, blended after the squash softens. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A gentle apple-and-sage version
The slow cooker softens cubed butternut squash with carrot, onion and a tart apple. Blending gives a smooth orange bowl without cream or coconut milk in the measured base. A small amount of lemon juice at the end is intended to lift the sweetness.

This is a proposed formula, not a tested slow-cooker batch. Squash weight is the peeled, seeded edible amount. Six hours on LOW is a starting estimate; tenderness and actual bowl volume need measurement.
What goes in the cooker
Cut squash to roughly three-quarter-inch cubes so pieces soften at a similar pace. Two and a half pounds prepared squash are more informative than a count of whole squash, which varies greatly. Chop the apple after peeling and coring, and use low-sodium broth so the final seasoning can be assessed.
Sage can dominate mild vegetables, so the draft starts with half a teaspoon dried rubbed sage. Do not photograph a coconut-cream swirl or label the soup creamy with dairy; the texture comes from the pureed squash itself.
Ingredients for 8 bowls
| Ingredient | Amount | Use |
|---|---|---|
| Peeled, seeded butternut squash, cubed | 2 1/2 pounds | About 3/4-inch cubes; edible prepared weight. |
| Yellow onion, chopped | 1 medium | Soup base. |
| Carrots, chopped | 2 medium | Soup base. |
| Tart apple, peeled, cored and chopped | 1 medium | Sweet-tart accent. |
| Low-sodium vegetable broth | 3 cups | Check package labels. |
| Olive oil | 1 tablespoon | Stir into vegetables. |
| Dried rubbed sage | 1/2 teaspoon | Start small. |
| Fine salt | 3/4 teaspoon | Adjust only after blending in trial. |
| Ground black pepper | 1/4 teaspoon | Soup base. |
| Lemon juice | 1 tablespoon | Stir in after blending. |
Step-by-step method
- Place 2 1/2 lb prepared squash cubes, one chopped onion, two chopped carrots and one chopped tart apple into a 5- to 6-quart slow cooker. Add 3 cups low-sodium vegetable broth, 1 tbsp olive oil, 1/2 tsp sage, 3/4 tsp salt and 1/4 tsp black pepper; stir and cover.
- Cook on LOW for approximately 6 hours until squash and carrots crush easily against the side. Do not use frozen unthawed ingredients or leave the filled cooker off for a long staging period. Appliance heat and cube size determine the actual time.
- Turn off the cooker. Puree carefully with an immersion blender, keeping the head submerged to avoid hot splashes, until smooth. Stir in 1 tbsp lemon juice. If too thick, add a measured little more broth and record the new ingredient and yield in the final recipe.
- Ladle into eight small bowls of about 1 cup each, measuring actual total volume in a kitchen trial. Cool any leftovers promptly in shallow containers and refrigerate according to current safe-handling guidance.
Cook until tender, then blend safely
Add broth before switching on the slow cooker and keep the lid on during the long cook. The ingredients should be fully heated and the squash and carrots mash easily at the end. A cold appliance, unusually large cubes or an overfilled vessel can move the six-hour mark.
Turn off the cooker and use a submerged immersion blender carefully around the hot liquid. A countertop blender would require working in small batches with proper venting; do not fill a sealed blender with hot soup. Add measured lemon juice only after the puree is smooth.
If the consistency is off
If a spoonful stands up almost like mashed squash, add broth by a measured increment and revise the card's final yield. If it seems thin, an extra unmeasured ingredient is not the solution; document the actual broth and vegetable weights before changing the next batch.
Well Plated has a slow-cooker squash soup with coconut milk. It supports the appliance approach but not a coconut claim for this different apple-and-sage bowl.
Serving and leftovers
Spoon into small bowls with a separate bread or side dish. Chefly's honey-roasted sweet potatoes are an alternative vegetable side, not an ingredient to blend into this soup. Eight roughly one-cup bowls are provisional; measure after pureeing.
Move leftover soup into shallow containers for prompt cooling and refrigeration; consult the linked FDA handling guidance for current storage practice. Do not leave the full slow-cooker insert cooling on a counter overnight.
Soup questions
Is the apple flavor strong?
One tart apple is a measured accent against 2 1/2 pounds of prepared squash; taste it in the kitchen trial before making a promise.
Can I add coconut milk?
That changes the base formula, texture and yield; test it as a documented variation.
When is it ready to puree?
The squash and carrot cubes should crush easily, not merely feel warm at the surface.
