- 4 boneless, skinless chicken breasts
- 1.5 lb baby potatoes, halved
- 1 cup chicken broth
- 0.5 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tbsp Italian seasoning
- 1 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp red pepper flakes (optional)
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Wash and halve the baby potatoes. Mince the garlic and set aside.
- Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using) until evenly coated.
- Layer the halved potatoes in the bottom of the crockpot. Place the seasoned chicken breasts on top.
- Pour the chicken broth over the chicken and potatoes to ensure they are evenly coated.
- Sprinkle minced garlic evenly over the chicken, then top with grated Parmesan cheese.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is tender and cooked through (165°F / 75°C) and potatoes are fork-tender.
- Remove chicken and potatoes carefully from the crockpot. Spoon sauce from the bottom over the top for extra flavor.
- Garnish with fresh chopped parsley before serving, if desired.
Notes
For a creamy sauce, consider adding cream cheese or heavy cream in the last hour of cooking. Adjust seasoning to taste.
