Homemade Hot Chocolate Mix. A dry cocoa, milk-powder and finely chopped chocolate mix with a measured serving instruction for twelve hot mugs. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A jar first, a hot mug later
This recipe is for a dry blend, not a ready-to-drink pot. Cocoa gives the familiar flavor while finely chopped real semisweet chocolate melts into hot milk. Dry milk powder makes the jar richer, but serving milk stays separate until a mug is prepared.

The proposed quantities should supply about twelve generous quarter-cup scoops, but the actual volume depends on chocolate particle size and how the mix settles. Measure the finished jar and taste a prepared mug before publishing a yield or packaging label.
Keep the mix completely dry
Sift confectioners' sugar and cocoa before adding dry milk powder. Tiny chocolate pieces distribute more evenly than large chunks, which can sink to the bottom of a jar and melt slowly in the mug. Use dry utensils and a clean airtight container.
Milk is an ingredient twice: powder in the blend and whole milk for each serving. Do not promise a dairy-free jar, and read semisweet chocolate labels for soy and shared-facility ingredients. The quarter teaspoon salt is for the whole proposed batch.
Ingredients for 12 mugs
| Ingredient | Amount | Use |
|---|---|---|
| Confectioners' sugar | 1 cup | Sift into dry mix. |
| Unsweetened cocoa powder | 1/2 cup | Sift into dry mix. |
| Instant nonfat dry milk powder | 1 cup | Use dry, check label. |
| Finely chopped semisweet chocolate | 4 ounces | Pulse/chop very fine; dry tools. |
| Fine salt | 1/4 teaspoon | Distribute evenly. |
| Whole milk, per serving | 8 fluid ounces | Heat separately for each mug; not added to storage jar. |
Step-by-step method
- Sift 1 cup confectioners' sugar and 1/2 cup unsweetened cocoa into a completely dry bowl. Whisk in 1 cup instant nonfat dry milk powder and 1/4 tsp fine salt. Chop 4 oz semisweet chocolate very finely and whisk it throughout.
- Transfer the dry mixture to a clean, dry airtight jar. Label the ingredient list including milk and the preparation instruction. Do not put liquid milk in the jar. Measure actual total volume in the kitchen trial; twelve generous 1/4-cup scoops are provisional.
- For one serving, heat 8 fluid oz whole milk in a saucepan until steaming, not boiling. Whisk approximately 1/4 cup of the mix into a small amount of hot milk first, then add the rest and continue whisking gently until all chopped chocolate has melted and no dry cocoa lumps remain.
- Pour into one mug. Repeat per serving with separately measured milk and mix; the five-minute heating estimate applies to one mug, not a twelve-mug pot. Check the actual sweetness, dispersibility and yield with a trial.
Whisk a smooth cup
Heat eight fluid ounces milk until steaming, then begin by dissolving the quarter-cup scoop in a small portion. Add the rest of the milk gradually and whisk until chopped chocolate melts. A mug of tepid milk may leave flecks rather than a fully blended drink.
Epicurious uses cocoa and chocolate together in a dry hot-chocolate mix. This draft adds dry milk and uses its own ingredient proportions; that reference does not validate the twelve-serving count.
Correct the first test mug
If powder clumps, recheck the sifting, chocolate particle size and whether the jar absorbed moisture. If the result is too sweet or too dark, change a measured batch ratio after tasting rather than telling readers to add an unknown amount of powder.
A spoon of mix in plain hot water would make a different drink from the eight-ounce whole-milk serving here. Test a water version separately before saying this powder works equally well either way.
Gifting and keeping
A gift jar should have an ingredient and milk-allergen label plus an instruction to whisk a measured scoop into hot milk. Do not print an unverified storage life, humidity tolerance or mailability claim. These depend on product ingredients and handling.
For serving a crowd, heat milk in batches and recalculate preparation time. The twenty-minute card estimate covers mixing the jar and heating one cup, not pouring twelve simultaneous mugs in five minutes.
Hot chocolate mix questions
Is the milk already in the jar?
Only dry milk powder is. Add 8 fluid ounces liquid whole milk when preparing each mug.
Will water work?
It is not the measured serving method and may give a thinner result; test it before recommending it.
Why finely chop chocolate?
Smaller pieces distribute through the dry blend and melt more readily in the hot mug.
