Swedish Almond Dream Cookies. Pale, crumbly Swedish-inspired drömmar made with baker's ammonia, almond extract and a blanched almond half. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

What makes a dream cookie different
Drömmar are small, pale Swedish cookies known for a delicate, crumbly texture and cracked surface. This almond-topped interpretation uses a little almond extract and a half almond on each cookie. It is not a coconut macaroon or a decorated sugar-cookie cutout.

Swedish Spoon describes baker's ammonia in this style and notes an almond-topped historic variation. The original reference is useful context, not evidence that Chefly's newly measured forty-cookie formula has been baked.
Use the right specialty leavener
Only food-grade baker's ammonia, also called ammonium carbonate, belongs in this dough. It has a strong smell during baking and is suited to thin, small cookies where the odor can escape. It is not household cleaning ammonia and should never be replaced by it.
Baking powder may give a different texture, according to Swedish Spoon; it is not an equal-volume, tested swap in this base recipe. Almond halves and almond extract make the tree-nut ingredient visible, so a nut-free claim would be misleading.
Ingredients for 40 cookies
| Ingredient | Amount | Use |
|---|---|---|
| Unsalted butter, softened | 1/2 cup | Not melted. |
| Granulated sugar | 1 cup | Cookie dough. |
| Neutral oil | 1/3 cup | Add slowly to creamed base. |
| Almond extract | 1/2 teaspoon | Cookie dough. |
| All-purpose flour | 2 cups | Spoon and level. |
| Food-grade baker's ammonia | 1 teaspoon | Also called ammonium carbonate; not household ammonia. |
| Fine salt | 1/4 teaspoon | Dry ingredients. |
| Blanched almond halves | 40 halves | One pressed lightly on each dough portion. |
Step-by-step method
- Heat oven to 300°F and line two baking sheets with parchment. Cream 1/2 cup softened butter with 1 cup granulated sugar until evenly pale. Mix in 1/3 cup neutral oil gradually and 1/2 tsp almond extract.
- Whisk 2 cups flour with 1 tsp food-grade baker's ammonia and 1/4 tsp fine salt until evenly distributed. Stir into the butter mixture just until a cohesive dough forms. Do not confuse the specialty leavener with cleaning ammonia.
- Divide into forty small pieces, roll gently and flatten slightly on the lined trays with space for spread. Press one blanched almond half lightly onto each. Bake one tray at a time about 18–22 minutes until cookies are pale with faintly golden lower edges and visible cracks.
- Cool thoroughly on a rack in a ventilated kitchen before eating or boxing; baker's ammonia has a pronounced odor during baking that should dissipate from fully baked thin cookies. Record actual texture, aroma, spread and count in a kitchen trial.
Mix and portion lightly
Cream softened butter and sugar, then add oil in a gradual stream rather than dumping it into one spot. Whisk the leavener throughout the flour before mixing in; a localized pocket would be unpleasant. Stop when dough just holds together.
Forty small portions should be spaced on parchment and flattened slightly before each almond half is pressed in. Uneven large cookies may need a longer bake and could retain an odor, so size and texture need a careful trial.
Bake pale and cool completely
A 300°F oven is intended to set the cookies without deep browning. Look for fine cracks and just a touch of color at the lower edge. Bake sequential sheets for a predictable draft clock; if both trays go in together, adjust rotation and real timing.
Ventilate during baking and let the cookies cool fully. If a cooled cookie still has a pronounced ammonia aroma, do not box or serve it; evaluate thickness, bake and leavener in a new test rather than masking the smell.
A varied cookie tin
The almond half helps these look different from chocolate-centered peanut-butter blossoms and the other iced cutouts planned for the calendar. Package only after the texture and scent are acceptable and after storage behavior is checked.
A recipient should be told about almonds, wheat and milk. Keep an almond cookie away from a nut-free assortment instead of relying on a visual garnish as the only allergen warning.
Dream cookie questions
Can I use household ammonia?
No. The recipe specifies food-grade baker’s ammonia only.
Why are they not browned deeply?
The low oven aims for a pale cookie with a faint golden base and small cracks.
Can I leave off the almond?
That changes the title and visual promise; test a plain drömmar version separately.
