Mini Mushroom Quiches

Mini Mushroom Quiches. Muffin-pan mushroom and Swiss mini quiches with a simple rolled pastry shell. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

Small savory bites with an actual crust

Mini mushroom quiches are useful when a party plate needs a warm, hand-held item instead of another dip. This version uses standard muffin cups lined with pastry, a concentrated mushroom-shallot filling, Swiss and a modest egg custard. They are not crustless egg bites.

The twelve-piece yield is an untested estimate. Pastry-round diameter and muffin-pan shape may determine whether there are twelve four-inch circles after rerolling. If the first trial produces fewer shells or extra custard, change the measured card rather than promising a fixed count.

Cook moisture out of the mushrooms

Eight ounces of finely chopped cremini mushrooms can release a surprising amount of liquid. Cook them with a small shallot in olive oil until the skillet is no longer wet. Filling raw pastry with uncooked mushrooms is a likely route to soggy bases and diluted custard.

Two refrigerated pastry rounds are a convenient starting point, but brands differ in size and ingredients. Swiss adds a gentle nutty note, while thyme is kept to one teaspoon so it does not overpower the mushrooms. The egg mixture is four eggs and three-quarter cup whole milk, seasoned explicitly rather than relying on the cheese alone.

Pastry may contain wheat and milk, in addition to the obvious egg and dairy filling. A purchased gluten-free crust or non-dairy cheese would need fresh fit, set and label checks; neither is the measured base.

Fine salt1/4 teaspoonCustard.
Ground black pepper1/8 teaspoonCustard.

Step-by-step method

  1. Heat oven to 375°F and lightly grease a standard 12-cup muffin pan. Cut twelve approximately 4-inch circles from two refrigerated pastry rounds, rerolling scraps only as needed. Press into cups without stretching; prick bases. Bake empty shells about 10 minutes until surfaces appear dry.
  2. Meanwhile warm 1 tbsp olive oil in a skillet. Cook 8 oz finely chopped mushrooms and one small chopped shallot over medium heat about 8–10 minutes until their liquid evaporates. Remove from heat and cool slightly.
  3. Whisk 4 eggs with 3/4 cup whole milk, 1 tsp chopped thyme, 1/4 tsp fine salt and 1/8 tsp pepper. Divide cooked mushrooms and 3/4 cup Swiss among the pastry cups. Pour egg mixture evenly, leaving a little headspace.
  4. Bake at 375°F about 30–35 minutes until the centers of the egg filling reach 160°F. Let stand in the pan 10 minutes, then lift onto a rack and cool another 10 minutes. Note actual shell fit, filling excess and yield in a first trial.

Start the shells, then add custard

Cut and fit pastry rounds without stretching them tight against the pan. A brief initial bake aims to dry the bases before the wet filling goes in. While shells bake, cook the mushrooms and let them cool slightly; very hot mushroom mixture can begin setting the egg before it is portioned.

Divide mushrooms and Swiss before pouring the whisked custard so each cup has a similar balance. Leave room below the pastry edge. Bake until the centers of the egg filling register 160°F, not merely until tops have color. Time depends on pan material and fill depth.

Let the quiches stand in the pan before transferring to a rack. The suggested twenty-minute rest is included in the total and helps the small shells hold their shape when lifted.

If the bottoms are damp or centers wobble

A wet mushroom mixture or a skipped shell bake can leave a soft base. Note whether the shells are dry after the first ten minutes and whether the skillet is truly free of liquid. Excessive custard in one cup may spill and adhere to the pan; fill evenly and document what remains.

A browned top is not proof that the egg center has reached its endpoint. Measure near the middle without touching the metal pan. If pastry edges color early, consider a lower rack or a shield in the kitchen test before changing the egg ratio.

Party service and handling

Serve warm after the set has been confirmed. For a buffet, plan small replenished batches rather than leaving an egg-and-dairy dish out indefinitely. Cooling, refrigeration and reheating instructions for a make-ahead version should be tested and checked against current primary guidance before publishing a specific promise.

The cover image should show pastry walls and mushroom pieces. A photograph of crustless green vegetable cups or bacon quiches would be a different recipe, regardless of a similar title.

Mini-quiche questions

Can I skip cooking mushrooms?

Not in this formula; cooking removes moisture before it reaches the pastry and egg filling.

Can I use a mini-muffin pan?

The measurements and bake time target a standard pan. Mini wells require a new cutter, portioning and endpoint test.

What tells me the centers are ready?

Measure the egg filling at its center for 160°F; appearances alone are not enough.
