Peaches and apple cider vinegar make a sweet-tart glaze for beef back ribs. Reduce the sauce separately, then brush it on near the end so the sugars have less time to scorch.

Ingredients
Approximately 4–6 servings, depending on how meaty the ribs are. Use a rimmed roasting tray, heavy-duty foil, blender and saucepan.
- 4–5 pounds beef back ribs, cut into sections that fit the tray
- 1/4 cup water for the foil packets
- 4 large ripe peaches, washed, pitted and sliced
- 1/4 cup apple cider vinegar
- 1/4 cup water for the glaze
- 1/4 cup maple syrup or honey
- 4 garlic cloves, minced
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes, optional
Choose beef back ribs, not thick plate short ribs. Plant-based alternatives need separate instructions. Check packaged ingredients for allergens and added alcohol.
Roast and glaze the beef ribs
- Heat the oven to 325°F (163°C). Remove the tough underside membrane if present. Pat the beef ribs dry without rinsing, then rub with paprika and salt.
- Place sections bone side down on heavy-duty foil. Divide the 1/4 cup cooking water among the packets, seal tightly and place on the rimmed tray. Roast approximately 2 1/2–3 1/2 hours, checking from 2 1/2 hours. Continue covered cooking until the meat is fork-tender; this is an estimate, not a verified cooking time.
- Blend peaches, apple cider vinegar, the separate 1/4 cup glaze water, syrup or honey, garlic and optional pepper flakes. Simmer gently in a saucepan for about 15 minutes, stirring, until the sauce coats a spoon. Add a little water if it becomes too thick.
- Reserve some uncontaminated sauce in a clean bowl. Open packets carefully and check the thickest meat away from bone. Whole beef cuts must reach at least 145°F (63°C), followed by at least a 3-minute rest; tenderness generally requires cooking beyond that minimum. If still tough, reseal and continue cooking, adding a splash of water if needed.
- Brush tender ribs with sauce. Raise the oven to 425°F (220°C) and roast uncovered approximately 5–10 minutes, watching closely for scorching. Keep foil clear of heating elements and use cookware rated for the temperature.
- Rest 10 minutes before slicing. Serve the clean reserved glaze separately.
Sauce questions
Peach sweetness and the glaze’s thickness vary with fruit ripeness and reduction time. Taste the sauce before it contacts meat and adjust gradually. Maple syrup and honey contribute added sugars; fruit-based sauce is not automatically low-sugar or healthier than another sauce.
Thawed frozen peaches are a possible variation, but drain excess juice and expect a different reduction time. Slow-cooker and plant-based versions have not been verified here.
Leftovers
Refrigerate portions in shallow containers within 2 hours, or 1 hour above 90°F (32°C). Store at 40°F (4°C) or below for 3–4 days. Reheat covered with a little water until the center reaches 165°F (74°C).
