Pecan Praline Cheesecake

Pecan Praline Cheesecake. A baked vanilla cheesecake on a graham crust, finished with a buttery brown-sugar pecan praline topping. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A chilled cheesecake with a warm-nut finish

A graham base and baked vanilla cream-cheese filling carry a brown-sugar pecan praline topping. It is a proposed twelve-slice dessert, not a no-bake pie or a pecan layer baked inside the filling.

The cheesecake needs a full chill. The one-hour cool and four-hour refrigeration are included in the total, which should be updated after a test.

Start with the crust

Press the measured crumb, butter and sugar mixture evenly across the pan bottom and bake briefly. A springform makes unmolding easier; ensure the pan is secure before filling.

Softened cream cheese mixes with less lumping. Add eggs at low speed, just until incorporated, so excess air does not produce unnecessary rise and cracks.

Step-by-step method

  1. Heat oven to 325°F. Line the bottom of a 9-inch springform pan with parchment. Mix 1 1/2 cups graham crumbs, 5 tbsp melted butter and 2 tbsp sugar; press across the bottom and bake about ten minutes. Cool briefly.
  2. Beat 24 oz softened cream cheese with 3/4 cup sugar until smooth. Mix in 1/2 cup sour cream and 1 tsp vanilla, then add three eggs one at a time on low speed, stopping as soon as combined. Pour over the crust.
  3. Bake approximately 55–60 minutes until the outer area is set and the center still has a small gentle wobble. Turn off heat and leave the cheesecake in the oven with the door ajar briefly if the top is browning, then cool on a rack for about one hour. Refrigerate at least four hours until fully chilled.
  4. During cooling, simmer 1/2 cup brown sugar, 1/4 cup butter, 1/4 cup cream and 1/8 tsp salt in a small saucepan, stirring until smooth and slightly thickened, approximately five minutes. Stir in 1 cup chopped pecans, cool until spoonable, then spread over the cold cheesecake shortly before serving. Cut twelve slices and record set, topping texture and yield in a trial.

Look for a gently set center

The outer cheesecake should be set while the center wobbles slightly rather than sloshes. Pan type and oven behavior change the estimated 55–60 minutes. Let it cool before refrigerating at least four hours.

Sally's Baking has a pecan pie cheesecake for comparison. This proposal has its own graham/vanilla base and a short cream-and-brown-sugar praline finish; the reference is not evidence that this formula was tested.

Cook the praline topping

Simmer brown sugar, butter, heavy cream and a pinch of salt until smooth and lightly thickened, then stir in pecans. Cool until spoonable so it does not melt the chilled top.

If the test topping becomes hard or runs off a slice, record the actual simmer time, pan heat and cooling interval before altering ingredients.

Serve and store chilled

Spread topping shortly before cutting twelve slices. This is a dairy-and-egg cheesecake; keep it refrigerated and establish exact holding quality in a real trial rather than claiming room-temperature gift stability.

The photograph should show the graham base, pale filling and nut topping as three distinct layers, not a pecan pie filling inside the cake.

Praline cheesecake questions

Is it no-bake?

No. Both crust and cheesecake filling go in the oven.

How long must it chill?

At least four hours after cooling in this working method.

When does the topping go on?

After the cheesecake is cold and the praline has cooled to a spoonable consistency.
