A chewy maple cookie

Rolled oats, toasted walnuts and pure maple syrup make a softer, chewy cookie rather than a thin crisp speculoos. The maple is paired with brown sugar so this working batch can hold its shape.

The formula has not been kitchen-tested; spread and maple intensity need a trial. Two dozen small cookies are a planning yield.

Use old-fashioned oats

Rolled oats give distinct flakes. Instant flavored oatmeal changes sugar and texture and is not a direct substitution. Pure maple syrup is specified rather than pancake-flavored syrup.

Toast walnuts briefly and cool them before folding into dough. Nut pieces and wheat, milk and egg must be identified in a mixed cookie tin.

Step-by-step method

  1. Toast 3/4 cup chopped walnuts in a dry skillet until fragrant and let cool. Beat 1/2 cup softened butter with 1/2 cup packed light brown sugar. Beat in 1/4 cup pure maple syrup and one egg until combined.
  2. Whisk 1 1/4 cups flour, 1/2 tsp baking soda, 1/2 tsp cinnamon and 1/2 tsp salt. Mix into the butter base, then fold in 1 1/2 cups old-fashioned oats and cooled walnuts. Cover and refrigerate the dough for about thirty minutes.
  3. Heat oven to 350°F. Scoop twenty-four similar mounds across two parchment-lined sheets, leaving room to spread. Bake one sheet at a time approximately 10–12 minutes until edges are golden and centers look set but still soft.
  4. Cool briefly on the sheets, then transfer to a rack for about twenty minutes total. Record actual spread, maple strength, chewy texture and twenty-four-cookie yield in a kitchen trial.

Mix and chill the dough

Cream butter and brown sugar, then beat in syrup and egg. Add the whisked flour, soda, cinnamon and salt before the oats and walnuts. Stop mixing when the dry streaks are gone.

A thirty-minute chill gives the dough time to firm. If the first tray spreads too widely, record room temperature, scoop size and actual chill before adding unmeasured flour.

Bake for soft centers

The edges should turn golden while centers look set but still soft. Cooling on the tray briefly lets the cookies finish without drying them in the oven.

Sally's Baking offers an oatmeal-cookie method with apple and cinnamon; this version has an independent maple-walnut ingredient balance, and that reference does not confirm its outcome.

Serving and holding

One small cookie is the proposed serving. No exact storage period or shipping result has been measured; assess chewiness after a day before writing gift guidance.

Avoid a photo with raisins or chocolate chips, which are not in this card and would make the recipe look like a different oatmeal cookie.

Maple oat questions

Are quick oats interchangeable?

Not in this working ratio. It specifies old-fashioned rolled oats.

Can I omit walnuts?

Removing three quarters of a cup of inclusions changes the batch; test a nut-free version separately.

How long is the chill?

Thirty minutes are included in the total-time estimate.
