Pesto Puff Pastry Pinwheels

Pesto Puff Pastry Pinwheels. A proposed basil-pesto puff pastry appetizer with sun-dried tomato flecks and mozzarella, chilled before slicing and baked golden. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

Small spirals for a savory tray

These pinwheels show their ingredients in the cut edge: thin green basil pesto, a few drained sun-dried tomato flecks and melted mozzarella between puff-pastry layers. The pastry is the structure; too much filling would make an oily center and hide the spiral. One sheet is intended to yield sixteen small pieces.

This is a new working formula, not a tested appetizer. The sheet size, pesto oil and exact baking time will need checking. The seventy-minute total starts after the pastry is safely thawed in the refrigerator according to its package and includes a twenty-minute log chill and brief cool, but excludes oven preheating.

Keep the filling thin and dry

Three tablespoons prepared basil pesto are enough to color one sheet without pouring a green puddle onto it. Jarred pesto ingredients vary: some contain pine nuts and cheese, and others use different nuts or dairy. Check the specific label before serving guests with allergies.

Oil-packed sun-dried tomatoes must be drained and blotted before chopping very finely. A quarter cup gives red accents rather than a heavy tomato layer. Low-moisture mozzarella is chosen because fresh mozzarella can leak water into the pastry. The beaten egg is for sealing and brushing, not stirred into the pesto.

All-butter puff pastry is the working default, but follow its package's thawing instructions. A frozen sheet cracked open on the counter or a warm sheet with melted butter layers will not handle like cool flexible pastry. The product may contain wheat and dairy; the formula also contains egg.

IngredientAmountUse
Thawed all-butter puff pastry1 sheetApproximately 9 by 9 inches; follow package's refrigerator thaw.
Prepared basil pesto3 tablespoonsSpread thinly; check pine-nut and cheese ingredients.
Oil-packed sun-dried tomatoes, well drained and finely chopped1/4 cupBlot before sprinkling.
Low-moisture mozzarella, finely shredded1/2 cupAvoid wet fresh mozzarella.
Large egg, beaten1 eggBrush exposed pastry edge and tops.

Step-by-step method

  1. Thaw one puff-pastry sheet in the refrigerator as its package directs. Heat oven to 400°F and line a sheet with parchment. Unfold pastry on a lightly floured surface, keeping it cool; spread 3 tbsp basil pesto in a thin layer and leave a 1/2-inch bare border along one edge.
  2. Blot and finely chop 1/4 cup oil-packed sun-dried tomatoes. Scatter over pesto with 1/2 cup finely shredded low-moisture mozzarella. Roll from the opposite side into a snug log, brush bare border with a little beaten egg and seal. Chill the log about 20 minutes.
  3. Cut into approximately 16 equal slices with a sharp knife. Place cut side up with room to expand, brush exposed pastry lightly with remaining egg and bake about 18–25 minutes until deeply golden and cooked through at the centers. Rotate pan if one side browns faster.
  4. Cool on the sheet about 5 minutes before serving warm. Record actual slice count, pesto seepage, center doneness and baking time in a kitchen trial.

Roll, chill, slice and bake

Unfold the cool sheet, spread pesto thinly and leave a narrow dry edge. Sprinkle the drained tomato bits and mozzarella evenly to the edges except the seam. Roll into a snug log and use a little egg on the dry border to seal. Refrigerate for about twenty minutes so the knife can cut rather than squash the spiral.

Cut into sixteen slices and lay cut side up on parchment with space to puff. Brush exposed pastry lightly with beaten egg without saturating the cut face. Bake at 400°F until the centers look cooked and the outer rings are deeply golden, somewhere around eighteen to twenty-five minutes in this untested draft.

Rest briefly on the sheet, then transfer with a spatula while warm. If the first batch browns far ahead of the center, note thickness and oven shelf rather than simply shortening the bake. The finished Pin should show actual red tomato flecks and no topping absent from the ingredients.

Troubleshooting the swirl

A loose log unravels as it bakes. Leave the border mostly dry, seal it firmly and chill before cutting. A dull knife can flatten the pastry; cut straight down with a sharp blade and wipe between slices if pesto builds up.

If oil pools, use less pesto or drain the tomatoes more thoroughly in the next kitchen test. Heavy cheese also weighs down the center. If pastry stays pale beneath the filling, extend baking until cooked through while watching the darker outside edges.

A dried-out spiral may be too thinly sliced or left in the oven too long. Record the sheet dimensions and slice thickness in the trial. The reference pinwheel page uses pesto and Parmesan/Asiago; this draft instead includes mozzarella and sun-dried tomatoes and does not copy the source's short hot bake.

Serve and handle leftovers

Serve as a warm appetizer beside a separate vegetable side such as Chefly's Mexican street corn salad. That salad is not another puff-pastry variation. The calendar's original 'Holiday Desserts & Hosting' board deserves routing review because this is savory; a relevant appetizer board should be confirmed before any Pin is posted.

Baked puff pastry loses crispness in a covered container. Cool and refrigerate perishable cheese-and-pesto leftovers promptly, then test an oven refresh before recommending exact time and temperature. Freezing unbaked logs may work, but it is not verified for this filling and is not in the base recipe.

Questions before assembly

Can I use fresh mozzarella?

Not directly. It carries more water; the base uses low-moisture shreds to protect the pastry layers.

Do I need the log chill?

It is in the measured method to keep slices defined. Warm dough can compress and smear the pesto.

Can I make it nut-free?

Prepared pesto may contain pine nuts or other nuts. Choose and verify an appropriate alternative pesto, then test the changed filling rather than relying on a broad label.
