Slow Cooker Peanut Chicken Stew

Slow Cooker Peanut Chicken Stew. A proposed slow-cooker chicken-thigh and sweet-potato stew finished with peanut butter, baby spinach and lime. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A rich broth without a long stovetop watch

Chicken thighs and sweet potatoes soften in tomato broth with garlic, ginger and spices. Peanut butter goes in near the end as a smooth slurry, so it enriches the liquid rather than collecting in thick lumps at the bottom of the cooker. Spinach wilts in the final heat, and lime juice brightens the finished bowl.

This is a proposed slow-cooker formula, not a kitchen-tested dinner. Low settings and chicken-piece thickness differ, so the six-hour-thirty-five-minute total is a conservative estimate. Every batch needs a food-thermometer check for 165°F chicken, and the full stew volume and six-bowl yield need a trial.

Ingredients that affect the finish

Use fully thawed boneless skinless chicken thighs, not a frozen block. USDA FSIS advises against slow-cooking frozen chicken. Sweet-potato cubes cut to about three-quarter inch should become tender in a similar window; large pieces may remain firm when the chicken is ready.

Crushed tomatoes, broth, onion, garlic and ginger build the liquid. Cumin and smoked paprika provide warm seasoning without a claim of regional authenticity. Choose unsweetened creamy peanut butter for the measured half cup, then whisk it with hot liquid before it meets the larger pot.

Peanuts are a major allergen. A different seed butter would require a newly tested sauce, label checks and a changed title and graphic. Broth and seasoning blends can hide other allergens; check the packages used. There is no rice or peanut garnish in the ingredient list or the six-serving calculation.

Step-by-step method

  1. Place 1 1/2 lb sweet-potato cubes and 1 diced onion at the bottom of a 6-quart slow cooker. Add 2 lb fully thawed boneless skinless chicken thighs, 3 minced garlic cloves, 1 tbsp grated ginger, one 14-oz can crushed tomatoes, 2 cups low-sodium chicken broth, 1 tsp each cumin, smoked paprika and fine salt, and 1/4 tsp pepper. Cover; do not use frozen chicken.
  2. Cook on low approximately 5–6 hours until sweet potato is tender and chicken reaches 165°F in the thickest piece on a food thermometer. Remove thighs and shred or cut into bite-size pieces; return to the stew.
  3. In a heatproof bowl whisk 1/2 cup creamy unsweetened peanut butter with a cup of hot stew liquid until smooth. Stir back into the cooker with 2 cups baby spinach and heat about 10–15 minutes until spinach wilts and stew is hot. Do not use the slow cooker to reheat chilled leftovers.
  4. Turn off heat, stir in 2 tbsp lime juice and divide into six bowls, excluding any rice or topping from the measured serving. Cool leftovers promptly in shallow containers; reheat to 165°F using a stove, microwave or oven.

Layer the cooker and finish carefully

Put the sweet potatoes and onion at the bottom, where vegetables will meet the hot liquid. Add thawed chicken, aromatics, tomatoes, broth and dry seasoning. Cover and cook on low for about five to six hours without repeatedly opening the lid. Use a thermometer in the thickest thigh to confirm 165°F, and check that the sweet potatoes are tender.

Lift out the cooked chicken and shred it, then return it to the pot. Whisk a cup of hot broth into the measured peanut butter in a separate heatproof bowl until smooth; stir the mixture back in. Add baby spinach and let it wilt during the last ten to fifteen minutes. Switch off the cooker before adding lime juice.

The base makes six bowls of stew only. A photograph may show a lime wedge but not a bed of rice that silently changes the serving basis. If this cooker runs hot or slow, record the actual time, final thickness and peanut-butter texture in the test.

Troubleshooting a thick stew

Peanut butter can appear as streaks if dropped straight into the pot. The hot-liquid slurry is a more controlled method. If the stew seems thin before the peanut butter goes in, don't assume it will stay thin; the butter and shredded chicken alter the body.

If sweet potatoes fall apart, record cube size and cooker time before changing the formula. If chicken has reached 165°F but vegetables need longer, avoid leaving meat to dry indefinitely; a kitchen trial can establish staging. Never compensate for an underheated center by relying only on a timer.

A very salty result may reflect the broth or peanut butter brand. This working formula uses low-sodium broth and a measured teaspoon of salt, but final tasting and brand review are needed. A pinch of hot pepper would be a variation, not an invisible ingredient to add for the photo.

Serve and store with the peanut warning

Serve hot with a separately chosen starch or a vegetable side. Chefly's Mexican street corn salad is an existing different dish, but it does not make this peanut-containing stew suitable for someone with a peanut allergy. Keep the allergy information prominent in the eventual recipe card.

Cool leftovers promptly in shallow containers and refrigerate. USDA FSIS advises reheating to 165°F on a stove, in a microwave or in an oven—not using a slow cooker to heat a cold batch. The exact quality and refrigerated life for this final formula should be verified before a strong meal-prep promise.

Questions before turning on the cooker

Can frozen thighs go straight in?

No. Thaw safely first; USDA FSIS guidance advises against frozen chicken in a slow cooker.

Why add peanut butter late?

Whisking it with hot stew liquid near the finish helps distribute a smooth peanut broth and lets the chicken and potatoes cook without a thick paste stuck to the bottom.

Is rice included in six portions?

No. The measured yield is six bowls of stew without rice or toppings.
