Slow Cooker Chicken Enchilada Casserole

Slow Cooker Chicken Enchilada Casserole. A layered slow-cooker casserole of shredded chicken, red enchilada sauce, black beans, corn tortillas and melted cheddar. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A casserole rather than a soup

Shredded chicken, black beans, corn tortillas and red enchilada sauce make a scoopable slow-cooker dinner under melted cheddar. Chefly already has a creamy chicken enchilada soup, which serves a different bowl-and-broth intent.

The four-hour LOW stage plus late tortilla layer is a working plan. No chicken-cook duration or eight-portion yield has been kitchen-tested.

Cook the chicken before layering

Chicken breasts start in measured sauce with onion and cumin. When the thickest part reaches 165°F, remove and shred on a clean plate, then return it to the sauce.

The black beans are already cooked and canned. Avoid adding dry beans or an unmeasured broth amount that would turn the casserole into soup.

Shredded sharp cheddar1 1/2 cupsTop at the end.

Step-by-step method

  1. Place 1 1/2 lb boneless skinless chicken breasts in a 5- to 6-quart slow cooker. Add 2 cups red enchilada sauce, one diced onion and 1 tsp cumin. Cover and start cooking promptly on LOW.
  2. Cook approximately four hours until the thickest chicken part measures 165°F on a food thermometer. Remove breasts to a clean plate, shred with forks and return to the cooker with one drained and rinsed 15-oz can black beans and 1 cup frozen corn.
  3. Cut twelve small corn tortillas into strips. Fold half the strips into the saucy chicken and scatter the rest over the top, followed by 1 1/2 cups shredded cheddar. Cover and cook on LOW approximately thirty minutes more until cheese melts, corn is hot and tortillas soften.
  4. Turn off and rest ten minutes before dividing into eight working portions. Record whether the late-added tortillas remain distinct, sauce thickness, chicken temperature and actual yield in a kitchen trial.

Add tortillas toward the end

Cut twelve small corn tortillas into strips. Adding them after the chicken cooks aims to preserve some layer definition rather than dissolving them through the full slow-cooker period.

The Magical Slow Cooker has a related chicken enchilada casserole. This version adds beans and corn and uses its own late-add sequence; the texture claim must be verified in its own trial.

Melt cheese and rest

Scatter cheddar over the remaining tortillas and cook just until cheese melts and corn is hot throughout. A ten-minute rest can make portions easier to scoop.

If the sauce is too thin or tortillas disappear, record sauce brand, cooker size and actual second-stage minutes before changing ingredients.

Serving and storage

Eight portions are provisional. A green salad could accompany the casserole but is not part of the measured card or nutrition.

Cool leftovers promptly under current FDA guidance. Reheated tortilla texture and an exact storage interval need actual review; this is not a ready-to-publish make-ahead promise.

Enchilada casserole questions
