Vegetarian Nut Roast with Mushroom Gravy

Vegetarian Nut Roast with Mushroom Gravy. A savory lentil-walnut loaf with mushrooms and herbs, served with a separate pan of creamy mushroom gravy. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A vegetarian main with a real gravy

Brown lentils, walnuts and browned mushrooms make a sliceable holiday loaf; a separate pan of mushroom gravy finishes the plate. The eight portions are a working yield, not kitchen-tested.

This is vegetarian, not vegan: eggs bind the loaf, and butter thickens the gravy. It should not be routed to a vegan board or share a false vegan image badge.

Cook moisture out of mushrooms

Finely chopped loaf mushrooms should brown with onion and carrot until their released water largely evaporates. Too much water can prevent clean slices.

Use already cooked, drained brown lentils. A dry-lentil substitution would change hydration and cooking entirely. Toast walnuts, then chop them small enough to distribute through the loaf.

Step-by-step method

  1. Heat oven to 375°F. Line a 9-by-5-inch loaf pan with parchment. In a skillet heat 2 tbsp olive oil; brown 8 oz finely chopped mushrooms with one chopped onion and one grated carrot until excess moisture evaporates, approximately 10–12 minutes. Add two minced garlic cloves and 1 tsp thyme briefly. Cool slightly.
  2. Mash 1 1/2 cups cooked drained brown lentils lightly, leaving some intact. Mix with 1 cup toasted chopped walnuts, cooked vegetables, 3/4 cup breadcrumbs, two eggs, 2 tbsp tomato paste and 3/4 tsp salt. Press firmly into the pan. Bake approximately 45–50 minutes until set and the egg-containing center measures 160°F; rest fifteen minutes before slicing into eight pieces.
  3. While the loaf bakes, brown the separate 8 oz sliced mushrooms in 2 tbsp butter in a saucepan. Stir in 2 tbsp flour and cook one minute, then whisk in 2 cups vegetable broth. Simmer until the gravy coats a spoon and flour tastes cooked, approximately 8–10 minutes; stir in 1 tsp Dijon.
  4. Serve one loaf slice with one eighth of the mushroom gravy. Record cooked lentil moisture, loaf cohesion, center endpoint, gravy thickness and actual yield in a kitchen trial.

Press and bake the loaf

Mash some lentils while keeping others intact. Breadcrumbs and two eggs bind the vegetables and nuts. Press the mix firmly into a lined loaf pan so air gaps do not crumble after baking.

Bake until set and measure 160°F at the center because the mixture contains egg. Rest fifteen minutes before slicing; an immediate cut may pull the still-hot loaf apart.

Make the separate gravy

Brown sliced mushrooms in butter, cook flour briefly and whisk in vegetable broth gradually. Simmer until it coats a spoon and no raw flour taste remains, then add Dijon.

Good Food offers separate nut roast and mushroom gravy references. This measured pair differs from those sources in its egg-bound loaf and butter gravy; neither source verifies this combined recipe.

Serve and assess leftovers

One slice plus one eighth of the gravy is the proposed serving. A vegetable side can complete the plate without being counted in the card.

Record loaf cohesion and gravy behavior after chilling before making reheating or freezing promises. Wheat, walnut, egg and dairy are declared allergens.

Nut roast questions

Is this vegan?

No. The loaf uses eggs and the gravy uses butter.

Are the lentils dry?

No. Measure one and a half cups of already cooked and drained lentils.

Why rest the loaf?

A fifteen-minute rest helps the hot egg-bound loaf firm for slicing.
