Pear muffins with a nutty butter note

Browned butter and small diced pears give these twelve muffins a warm flavor without a frosting or streusel layer. The fruit is folded through the batter, not arranged on a cake as in the separate pear upside-down draft.

The formula is untested. Pear moisture, browned-butter loss and muffin-pan fill need recording before publication.

Brown butter without burning it

Use a light-colored saucepan so the milk solids are visible as they turn golden. Take the pan off heat and transfer butter promptly when the aroma is nutty; very dark flecks can taste bitter.

Let it cool until warm before whisking with eggs and milk. A hot pour could change the egg mixture or leave uneven pockets.

Step-by-step method

  1. Heat oven to 375°F. Line or grease a standard twelve-cup muffin pan. Melt 1/2 cup butter in a light-colored saucepan over medium heat, stirring or swirling until golden-brown flecks form and it smells nutty, approximately 6–8 minutes. Pour into a heatproof bowl to stop cooking and cool until warm, not hot.
  2. Whisk 2 cups flour, 1/2 cup brown sugar, 2 tsp baking powder, 1/2 tsp cinnamon and 1/2 tsp salt. Whisk two eggs, 3/4 cup milk, 1 tsp vanilla and the cooled browned butter separately.
  3. Fold wet into dry just until no flour streaks remain. Fold in small diced pieces from two peeled firm-ripe pears. Divide among twelve cups without overfilling.
  4. Bake approximately 20–22 minutes until tops spring back and a center tester comes out without wet batter. Cool five minutes in the pan, then on a rack for about ten more. Record actual pear volume, butter loss, pan fill and twelve-muffin yield in a kitchen trial.

Choose firm-ripe pears

Two medium pears should be peeled and diced small, but the true volume depends on fruit size. Measure the first batch rather than promising exactly one and a half cups from every pear.

Pastry Affair has a related brown-butter pear muffin reference. This version has its own brown-sugar, milk and spice balance and requires an independent bake test.

Fold and bake gently

Whisk dry and wet bowls separately, then fold just until flour disappears. Add pear pieces last so they remain visible and do not release too much liquid while mixing.

Fill a standard twelve-cup pan evenly. Look for a springy top and no wet batter on a center tester rather than assuming twenty-two minutes fits every oven.

Serve and assess holding

Cool briefly in the pan, then on a rack to avoid soggy bottoms. One standard muffin is the provisional serving.

No exact storage period or freeze-thaw texture is established for this fruit-heavy muffin. Photos should show plain golden domes and a pear-studded interior.

Pear muffin questions

Is the butter merely melted?

No. Cook until golden-brown solids and a nutty aroma appear, then stop the heat.

Can I use very soft pears?

The measured method calls for firm-ripe fruit so diced pieces hold in the batter.

Is there a crumble topping?

No. The working card has plain muffin tops.
