A simple warm cup

Plain unsweetened almond milk warms with a cinnamon stick, then gets vanilla and a small measured amount of maple syrup. It is a quiet winter beverage rather than coffee, chai or hot chocolate.

The proposed four small cups and sweetness need a trial with a named almond-milk carton. Almond remains a tree-nut allergen.

Start with unsweetened milk

A sweetened vanilla almond milk would add unknown syrup and vanilla before this recipe begins. Choose plain unsweetened milk and record its brand.

The whole cinnamon stick can be removed cleanly. Ground cinnamon would leave flecks and needs a separate measured version.

Fine salt1/16 teaspoonSmall balancing pinch.

Step-by-step method

  1. Pour 4 cups unsweetened plain almond milk into a saucepan with one whole cinnamon stick and 1/16 tsp fine salt. Heat over medium-low, whisking occasionally, approximately ten minutes until steaming but not boiling hard.
  2. Turn off heat, cover and let the cinnamon steep approximately five minutes. Remove the stick and whisk in 2 tbsp pure maple syrup and 1 tsp vanilla extract.
  3. Taste a cooled spoonful and document the carton brand and sweetness before changing the measured syrup amount. Do not make a caffeine, sleep or health claim for this drink.
  4. Pour into four heatproof cups and measure the actual finished volume after a kitchen trial. The recipe contains almond tree nuts even though it has no dairy milk ingredient.

Warm gently

Heat over medium-low until steaming, whisking occasionally. A hard boil can change some plant milks' texture or concentrate the drink.

The Honour System has a related warm maple-vanilla almond milk reference. This four-cup version adds a measured whole-stick infusion and has not been kitchen-tested.

Finish off heat

Let cinnamon infuse five minutes, then remove it and whisk in vanilla and maple. Adding the extract after heating keeps its aroma from dissipating in a prolonged simmer.

The teaspoon vanilla and two tablespoons syrup are in the measured card. A different sweetness level would require its own recorded adjustment.

Serve and hold

Pour into four heatproof cups and check actual post-heating volume. No exact refrigeration or reheated texture has been verified.

Do not claim a sleep benefit or medical effect. Photograph the pale almond drink rather than a mug of cocoa with marshmallows.

Almond-milk questions

Does it contain dairy milk?

No dairy milk is an ingredient, but check the carton for cross-contact and other additives.

Is the cinnamon left in the cup?

No. Remove the whole stick after steeping.

Can I use sweetened almond milk?

That changes the measured sweetness; taste and record a revised version rather than adding the same syrup automatically.
